Tiramisu is a coffee-flavored Italian dessert. It is made of ladyfingers dipped in coffee, layered with a whipped mixture of eggs, sugar, and mascarpone cheese, flavored with cocoa. The recipe has been adapted into many varieties of cakes and other desserts.

The origin of Tiramisu is not clear and there are several competing theories. Some claim that it originated in the Veneto region of Italy in the 1960s or 1970s, while others attribute its creation to the town of Siena in Tuscany. It is likely that the dish has evolved over time and has been influenced by various cultural and culinary traditions. Regardless of its origins, Tiramisu has become a popular dessert around the world, known for its delicate layers of ladyfingers, mascarpone cheese, espresso, cocoa, and liqueur.

 

Recipe Ingredients

·              6 eggs yolks

·         3/4 cup white sugar

·         2/3 cup milk

·         1 ¼ cups heavy cream

·         1 pound mascarpone cheese

·         2 tablespoons strong brewed coffee, cooled

·         2 tablespoons rum

·         24 ladyfingers


PREPARATION

1.   Step 1

In a large bowl, beat the egg yolks and sugar together until thick and lemon-colored.

2.   Step 2

In a medium saucepan, heat the milk until it just begins to simmer. Remove from heat. Pour a small amount of hot milk into the egg mixture, whisking constantly. Pour the egg mixture back into the saucepan with the remaining milk. Cook over low heat, stirring constantly until the mixture thickens enough to coat the back of a spoon. Remove from heat and let cool. 

3.   Step 3

In a large bowl, beat the heavy cream until stiff peaks form. Stir the mascarpone cheese into the egg mixture until smooth. Gently fold in the whipped cream.

4.   Step 4

In a small bowl, combine the coffee and rum. Dip each ladyfinger into the coffee mixture and arrange in a single layer in a 9x13-inch dish.

5.   Step 5

Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of ladyfingers and mascarpone mixture.

6.   Step 6

 Sprinkle cocoa powder over the top. Cover and refrigerate for at least 2 hours, or overnight, before serving.
